Creamy Chicken and Rice
So I know that I haven't posted for awhile.... I am sorry. I would post if anything interesting would happen to me, but alas my life is as boring as ever. I have taken up beading, well I haven't taken it up yet. I don't actually have any beads in my house but I have taken up READING about beading. I have signed up for beading catalogs to be sent to me and I have taken notice of others jewelry. That's about it. I think I have some pretty good ideas for what I would like to do. We'll have to see how they turn out.
The only other thing is that Wayne is almost done with this semester of school. It looks like he got "A"s in 3 of his 4 classes. (:
So I am starting a recipe corner on my blog and I have decided to share one of the simplest recipes I have for my first recipe. It is called creamy chicken and rice. Since I am a visual person and like to see what it is supposed to look like before I cook it. Here is a picture that I took of the dish in the casserole dish and on my plate.
Creamy chicken and rice
I love how simple and tasty this recipe is. This is great on a chilly night. Serves about 4-6 (or enough for dinner tonight and leftovers for tomorrow too.
1 (16 oz) jar Alfredo sauce
2 cups chicken broth
1 1/2 cups uncooked rice
1 can diced tomatoes (or 2 tomatoes diced)
1/4 tsp pepper (black or white)
1 lb boneless skinless chicken breasts thawed
Grated Parmesan
Preheat oven to 400. Combine all ingredients except Parmesan cheese into a 9x13 pan. Cover with foil and bake 45 minutes. Remove foil and sprinkle with cheese over mixture. Bake an additional 10-15 minutes uncovered or until Parmesan cheese is slightly brown and chicken is no longer pink in the center.
