Chicken Enchiladas


Chicken Enchiladas
I don't know why but my friends love these. Whenever one of my friends would visit it was just assumed that I would make these sometime during his visit.

They are really simple too. I would say a pan of these would serve 6-8 people (depending on the people)

You will need:
  • 8 flour tortillas (burrito size)
  • at least one breast of chicken cooked and shredded or diced into small pieces
  • corn (I use frozen)
  • 1 can refried beans
  • shredded cheese (I like Mexican shredded cheese or American cheese)
  • (optional) if you want to tone down your sauce I sometimes add either white or Spanish rice.
  • and of course the hottest Enchilada sauce you can stand (I am a wimp and like to taste other foods the next day so I get the mild) I like the "Old El Paso" brand.

Take a tortilla and fill with about a handful each of chicken, cheese, corn, a layer of refried beans and a bit of the enchilada sauce. Roll all 8 of them up and put the edges on the bottom of the 9"x13" pan or make only 4 in an 8"x8". Pour the remaining enchilada sauce and some cheese on the top. Cover with foil. Heat oven to 350 and bake 20-30 minutes or until hot and cheese is bubbly.
